Bitter Gourd


As the name specifies, it is bitter but have great nutritional values. It is also very much helpful to control diabetes and much more, like good for eyes, body, e.t.c

Ingredients Required: –

  • Bitter gourd – 6-7  (pieces)
  • Onions – 2 (sliced)
  • Green chilies – 2-3 (chopped)
  • Ginger – 1 inch piece (grated)
  • Red chili powder – 1/4 tsp
  • Turmeric powder – 1/2 tsp
  • Dried coriander powder – 1 tsp
  • Asafetida – a pinch
  • Cumin seeds powder – 1/2 tsp (roasted)
  • Garam masala – 1/2 tsp
  • Dried mango powder – 1 tsp
  • Salt – as per taste + 1 tsp
  • Fresh coriander leaves – 2  tbsp
  • Mustard oil – 2 tbsp


  • First of all, wash bitter gourds with plenty of water.
  • Now, peel them and cut in round. Make sure that while peeling don’t dispose of the peel as it will work as a masala of bitter gourds.
  • Then, add 1 tsp of salt and keep them aside for 30-45 minutes and then squeeze water ( as it decrease bitterness)
  • Now, take pan and heat oil in it and then add cumin seeds, asafetida and sauté.
  • After this add bitter gourds and the species and mix well.
  • At the end, add dried mango powder and fresh coriander leaves.
  • Then cook them till soft and garnish with fresh coriander leaves.
  • Serve hot with chapatti.

Bitter gourd

Note: –

  • You can also try for stuffed bitter gourds.
  • For this you just have to mix all species in small bowl and the peel of bitter gourds.
  • Then, empty bitter gourds from inside and fill them and with the help of any color spool (dhaaga) close them so that you can stir fry them, otherwise they will open any filling will come out.
  • Then cook them till soft and garnish with fresh corainder leaves.
  • When you serve them remove spool with care.
  • Serve hot with chapatti.
